Featured Recipe

I’ve been working to develop (or tweak) recipes with limited sugar, oil and fat lately.  That’s made me take a second look at rubs.  You know, those things we put on chicken wings, baby back ribs, etc.  This one is mine.  You can easily eliminate the salt if you’re on a low sodium diet.   I’ve tried it (so far) on chicken, tofu and fish.  I’ve also tossed a teaspoon full in my fish marinade and sprinkled it on stir fried vegetables.

Savory Rub

1 tsp. white pepper

1 tsp. salt (can easily be omitted)

1 tsp. ground mustard

1 tsp. dried dill

½ tsp. nutmeg

½ tsp. cloves

1 tsp. dried Tarragon

1 tsp. allspice

1 tsp. dried thyme

1 tsp. ginger

1 tsp. oregano

1 tsp. coriander

Simply place everything in a dish and stir it around.  It’s that simple!  This will keep in an airtight container for several months.
