Mezzing Around – Tastes from the Middle East

Mezze translates loosely as “to taste”.  Middle Eastern food features some of the most flavorful dishes in the world – with the emphasis on fresh ingredients, healthy oils and aromatic spices.

Most of us know Tabbouleh and Hummus.  But what about Dolma, Labneh, and Mercimek Koftesi (Turkish red lentil meatballs)? We’ll make small plates, dips, spreads, and salads from Middle Eastern cuisines such as:  Lebanese, Persian, Turkish and Albanian.

This will be a vegetarian class, with a limit of 10 students.  Nuts and Seeds will be used in this class.  Bring a Chef’s knife, a container for leftovers, and your adventurous spirit!

FLIRTING WITH FLAVOR – an herb and spice blend class

Cultures around the world use spices and herbs to add distinctive flavor to the simplest of meals.  We’ll make fresh spice blends and combine exotic spices and herbs to bring vegetarian appetizers, entrees and side dishes to life!  Working in teams we’ll explore recipes like: Labna with saffron, apricots and pistachios; Harissa spiced Summer Vegetable Tagine with Dukkah; Authentic Greek Briam; and Middle Eastern Roasted peppers with preserved lemons and capers.  Nuts and Seeds will be used in this class.   Wear closed toe shoes, bring a chef’s knife, a container for leftovers, and an adventurous spirit!   Limited to 10 students.
